Amygdalota are almond cookies of Greek origin. With almond, egg white, and sugar as the only ingredients, these chewy treats are quick and easy to make, not to mention packed with protein.


  1. Three main ingredients: 3 cups almond flour, ½ to 1 cup sugar (depending on how sweet you want it), 3 egg whites whipped. Optionally, you may add a dash of salt for slight savoriness or 1 tsp almond extract for extra almond taste. I prefer both.
  2. Mix all the above.
  3. Shape into shape of choice. Press a whole almond into the dough.
  4. Bake at 350F for 15 minutes. Texture should be soft and chewy.
