There are two ways to flavor a macaron — by either flavoring the shells or the filling. To add flavor to the filling, wet or dry ingredients may be used. To add flavor to the shell, only dry ingredients can be used, as wet ingredients will prevent the macarons to bake properly.
Here are some macaron shell flavors that can be created from dry ingredients added to my basic macaron recipe:
- Almond – substitute 2 tsp of the powdered sugar for powdered Chinese apricot kernel
- Black Sesame – add 1 tsp ground black sesame
- Chinese Five Spice – add 1 tsp Five Spice powder
- Chocolate – add 1 tsp 100% cocoa powder
- Cinnamon – add 1 tsp ground cinnamon
- Coffee – add 1 tsp instant ground coffee
- Ginger – add 1 tsp ground ginger
- Gingerbread – add 1/4 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1/4 tsp ground allspice, and 1/4 tsp ground ginger
- Matcha – add 1 tsp matcha powder
- Strawberry – add 1 tsp ground freeze-dried strawberries
- Thai Tea – add 1 tsp Thai tea powder
